Pear and leek soup

Ingredients: |

30 ml (2 tbsp) olive oil
1 package of Cultures de Chez Nous sliced leeks
1 L (4 cups) chicken broth
2 potatoes, peeled and cut into large chunks
5 pears, peeled de-seeded and quartered
250 ml (1 cup) milk

Preparation: |

Heat the oil a saucepan over medium heat. Brown the leeks gently until they become transparent. Add the broth, potatoes and pears. Salt and pepper to taste. Bring to a boil and then simmer for about 15 min. or until the potatoes are tender. Reduce to a puree in a blender or food processor. Pour into the saucepan and add the milk. Heat and serve.
garnish with tarragon.
